Rice with socarrat, Edu Torres, Molino Roca

Two arms, two heat levels, twice the rice

Each arm raises and lowers its pan with its own handwheel, so each rice dish gets its own cooking. One on a high heat for the sofrito (the aromatic base at the start of the recipe) while the other finishes the socarrat. When TopBrasa joined forces with Edu Torres (Molino Roca), the goal was clear: to master the fire so the rice takes centre stage.

Productivity: two services side by side

At peak times, moving from one paella pan to two cuts waiting times for your customers. The PA160C lets you serve two rice dishes at the same time, or cook a paella on one side and meat, fish or vegetables over the wood fire on the other.

  • Full control, twice over: two handwheels to set each pan precisely.
  • Consistent service: the same socarrat in every pan, service after service.
  • Durability: built for heavy professional use.

Profitability and showmanship

More servings per session from a single work station, and a wood-fired burner on show that draws every eye.

Catering, events and shows

With heavy-duty castors and two stainless steel base cabinets, it moves to wherever the event is and cooks for large groups, without giving up wood-fired rice.

What makes the TopBrasa burner designed with Edu Torres unique?

  • Firebrick lining: the lined interior keeps the heat steady and protects the structure.
  • Professional lifting system: raise or lower each pan smoothly to fry the sofrito, cook the rice, then sear it at the end for the socarrat.
  • The Molino Roca seal: backed by Molino Roca, producer of an exceptional rice.

Frequently asked questions about the PA160C

Who is the PA160C paella burner for?
For restaurants that specialise in rice and paella, restaurants that serve rice every day, and caterers or event organisers who need to cook two paellas at the same time. For home or a small business, the 1-arm PA70C is a better fit.
Is the paella burner an accessory for the Basque grill or the Santa Maria grill?
No. It is an appliance in its own right, designed for paella. It is slightly larger than the Basque grill and much larger than the Santa Maria grill, so it can hold a paella pan of up to 70 cm above the embers. It is not mounted on another appliance: you buy it complete, tabletop or on a stainless steel cabinet with castors.
Can you cook two paellas at the same time?
Yes. Each arm has its own handwheel, so each pan has its own height above the embers. You can cook two rice dishes at different stages, or a paella and food on the grill.
Is the fire on each side independent?
No: both arms share the same bed of embers. If you cook with one arm only, you gather the embers under that arm. It is more versatile that way: one large paella, two at once, or a paella and grilled food.
What size of pan does each arm take?
Each arm takes paella pans from 10 to 70 cm in diameter.
How many servings per session?
For each 70 cm pan (the largest size): around 10 to 15 people in a thin layer, 18 to 20 up to the rivets and up to 30 when the pan is full. With two paellas at the same time in a thin layer: around 20 to 30 servings (up to 60 with both pans full). These figures are approximate.
Does it run on wood?
Yes. You cook over wood, like traditional paella: kindling to light the fire and logs to keep the embers going. The firebrick lining holds the heat.
Is it only for paella?
No. The round grill also works as a barbecue: meat, fish or vegetables over a wood fire. And because it takes pans from 10 to 70 cm, you can use whichever pan you need each day. On the 2-arm models, you can cook a paella and food on the grill at the same time.
Wood or gas: which is better for paella?
Over wood, the paella takes on a smoky note and the heat of the embers wraps around the pan; with gas, you set the heat at the tap, without that smoky note. The TopBrasa burner cooks over wood and controls the heat with a handwheel that raises or lowers the pan, without touching the fire.
What are its dimensions?
1,555 × 820 × 1,375 mm (width × depth × height). It sits on heavy-duty castors so it can be moved.
How much does the PA160C cost?
The PA160C costs €6,000 + VAT. VAT and delivery not included.
What is the cabinet on the cabinet version?
It is the stainless steel base unit, with doors and castors, that the burner sits on (PA70C and PA160C). The tabletop version (PA70 and PA160) has no cabinet: it sits on a stable, suitable surface.
Is delivery included in the price?
No. Prices are shown excluding VAT, and delivery is not included. Request a quote to find out the delivery cost to your address.
Is the paella pan included?
No, the paella pan is not included: use your own, from 10 to 70 cm in diameter.
Do you offer training?
Yes. We regularly run group training sessions at our showroom in Fraga (Spain), according to the schedule and subject to availability. Contact us for the next dates.
