Wood-fired
paella burner

Let the rice take centre stage

Professional wood-fired paella burner in stainless steel, designed with Edu Torres (Molino Roca). Firebrick lining and a handwheel: you adjust the height of the paella pan above the embers at every stage of cooking.

Available with 1 or 2 independently adjustable arms. A handwheel sets the height of the paella pan above the embers, without moving the logs: a high heat for the sofrito (the aromatic base at the start of the recipe), a moderate heat for cooking the rice and a high heat again at the end for the socarrat (the thin, golden crust of rice on the base of the pan). The tabletop version is supplied without a cabinet or castors and sits on a stable, suitable surface.

Much more than paella

Edu Torres, of Molino Roca, designed the wood-fired paella burner with TopBrasa

Designed with Edu Torres, of Molino Roca

Edu Torres represents the fourth generation of Molino Roca, the Valencian rice mill founded in 1903, whose rice is used by leading chefs in Spain.

Together, we designed a paella burner to master the wood fire: setting the height of the pan precisely at every stage, from the sofrito to the socarrat, so the rice takes centre stage. The spirit of Valencian paella.

The alternative to a gas paella burner on a tripod

For paella, most people use a gas paella burner on a tripod. The TopBrasa burner runs on wood and controls the heat with a handwheel.

Gas paella burner on a tripod

  • The pan always stays at the same height
  • Heat is set at the gas tap, without the smoky note of wood
  • It has to be set up and taken down every time
TopBrasa

Wood-fired paella burner

  • Handwheel: raise or lower the pan without touching the fire
  • Wood fire: cooking over wood adds a smoky note
  • Firebrick lining: it holds the heat
  • Always ready, in stainless steel, tabletop or on a cabinet with castors

A paella pan of up to 70 cm: around 10 to 15 servings in a thin layer, 18 to 20 up to the rivets, up to 30 when the pan is full.

The alternative to a brick-built paella fire

A brick-built fire for cooking paella is built once, in one place. The TopBrasa burner runs on wood with no building or masonry work.

Brick-built paella fire

  • It needs building work
  • You control the fire by moving the wood
  • It stays where it was built
  • The height of the pan is fixed
TopBrasa

Wood-fired paella burner

  • No building work: nothing to build
  • Handwheel: set the height of the pan without touching the wood
  • Castors (cabinet version): on the terrace, in the garden or at an event
  • Stainless steel with a firebrick lining

You cook over wood, like traditional paella: kindling to light the fire and logs to keep the embers going. Every cook decides when the rice is just right.

For professionals and for home cooks

Restaurants, caterers and events

For restaurants, caterers and events, this commercial paella burner is built for regular use. The firebrick lining holds the heat and the stainless steel is easy to clean.

With a 2-arm model, you can cook two paellas at the same time, or a paella and food on the grill. Each arm has its own handwheel and takes a paella pan from 10 to 70 cm.

At home: wood-fired paella with no masonry work

For wood-fired paella at home, people often use a gas paella burner on a tripod or a brick-built paella fire. This stainless steel outdoor paella cooker is the alternative, with no building or masonry work. The tabletop version sits on a stable surface; the cabinet version with castors moves around the garden or the terrace.

It is not just for paella: on the round grill you can also cook meat, fish or vegetables over a wood fire.

Servings: how many people does a 70 cm pan serve?

With a 70 cm paella pan, allow around 10 to 15 servings with a thin layer of rice (as in restaurants), 18 to 20 up to the rivets of the handles, and up to 30 when the pan is full. With 2 arms, these figures apply to two pans: around 20 to 30 servings in a thin layer. Approximate figures, depending on portion size.

Frequently asked questions

What is a wood-fired paella burner?
It is a wood-fired paella cooker, made of stainless steel with a firebrick lining. An arm with a handwheel sets the height of the paella pan above the embers, so you can adjust the heat at every stage of cooking without touching the wood.
Does it run on gas?
No, it runs on wood only: kindling to light it and logs to keep the embers going. The heat is not set with a gas tap, as on a gas paella burner, but with the handwheel that raises or lowers the pan. Cooking over wood also adds a smoky note.
What is the difference between the PA70 and the PA160?
The PA70 (and the PA70C) has one adjustable arm and cooks one paella pan at a time. The PA160 (and the PA160C) has two independently adjustable arms: two paellas at the same time, or a paella and food on the grill. All models take pans from 10 to 70 cm.
What is the difference between the tabletop and the cabinet models?
The tabletop models (PA70, PA160) come without a cabinet or castors and sit on a stable, suitable surface. The cabinet models (PA70C, PA160C) are mounted on a stainless steel cabinet with castors, so they are easy to move. Choose according to where you plan to use it.
How many people does a 70 cm paella pan serve?

Which model is best for catering or events?
